L. and I discovered how good their waffles were at A Bite of Belgium years before we moved to Las Cruces.

We had just arrived in town on one of our relocation scouting trips and were hungry to the max when we saw the sign.

A Bite of Belgium, in Las Cruces, New Mexico, is open daily.

Soon we sat inside noshing the tastiest waffles I’ve had outside of Belgium.

Now, I can’t say those A Bite of Belgium waffles were the reason we decided to make Las Cruces our new home.

But they sure didn’t hurt the cause.

The ambiance and level of service we experienced that day seemed as sweet as those Belgian waffles. So yes, we’ve gone back ~  I even ordered the corned beef hash once.

It was nice enough but oh. those. waffles.

And so I’ve concluded A Bite of Belgium is one of those places where the specialty truly is what they do best. And where what they do best IS the best around.

It’s why the next time I get my hands on A Bite of Belgium menu, I won’t do silly (again) and order something I can get elsewhere  . . . like bacon and eggs. And why I don’t want you to do silly either.

Let’s both eat more waffles at A Bite of Belgium. Enough said.
